Sausages, Chorizos, and other prepared meats

Elore is a cured and dried sausage (chorizo) company which began in 1988. The first year was hard for Miami pelotaris and three of the owners Juan and Jesus Elejabarrieta from Durango, and Juan Antonio Oregui from Markina along with two other partners, Miguel Piedra a pelota businessman from Durango and Fermin Sobron an expert chorizo maker, decided to join together and create "Elore" their very own chorizo making company in Florida under the name of Quijote. Today the company is very well established. Elore makes dried wood shavings, in order to absorb the humidity, so the sausages dry naturally,as they do in the Basque Country in the traditional Rioja style. The company has 12 employees. Their markets include the US, Puerto Rico, Mexico, Panama and the Virgin Islands. They make mild and spicy chorizo, salami, loin and other Basque specialties like txistorra and solomo. A couple of years ago they joined together and their efforts have proven to be successful as their company continues to grow.
