As often as possible, TXIKITO brings a slice of Basque life to Chelsea by celebrating a holiday or Saint's day with a traditional menu and general Basque fun and hospitality. In this spirit, we are proud to announce our next Txoko Monday at Txikito with guest Chefs Fany Gerson & Josefina Santacruz. Txikito is thrilled to welcome them on July 26th at 7pm for a dining experience inspired by Mexico by way of New York City.
The preservation of much of the Basque Country's gastronomic and cultural heritage owes a great deal of debt to the Txoko, or Sociedad Gastronomica, as it is known in Spanish. Txokos are private social clubs where members gather to cook, sing, and generally bond around the table. That there are more than 200 Txokos with hundreds of members throughout the Basque country underscores not only the importance of the Basque table but the relentless desire of the Basque people to converge around activities related to food. The level of cooking is high, and the sophistication and experimentation in many Txokos grow every year. In their current form, Txokos provide continuity with the past and a pathway to the modern and new.
Fany Gerson has worked in kitchens worldwide including Michelin-three-star Akelare in Spain, and Eleven Madison Park and Rosa Mexicano in New York developing their acclaimed modern Mexican desserts. Her first cookbook, My Sweet Mexico: Recipes for Authentic Pastries, Breads, Candies, Beverages, and Frozen Treats, will be published by Ten Speed Press in September.
Josefina Santacruz can be seen this fall on her show La Buena Dieta a cooking show transmitting on Fox owned El Gourmet channel (elgourmet.com) in Latin America and the US. New Yorkers are familiar with her work from her time with Modern Mexican Restaurants assisting in the opening of Pampano. Prior to that, Josefina was chef-partner of Mai-Pei in Mexico City where she channeled her love of Asian cuisine. Over the years she honed her skills working in various culinary positions such as The Ritz Carlton in Pentagon City and as an ad-hoc instructor and judge at Centro Culinario Ambrosia in Mexico.
Both native to Mexico City, these graduates from the Culinary Institute of America were destined to meet, claims Fany Gerson, due to their common roots, mutual friends and more importantly to their shared philosophy on food. "Eating is not simply a matter of necessity but a way to share," says Josefina. Since meeting, Gerson and Santacruz have had opportunities to teach and attend events together, each in her area of expertise, but for the first time they have a chance to come together and prepare a menu that speaks to their mutual respect for food and each other.
In the spirit of sharing...Fany and Josefina will be joined by our very own "Mivi," aka Ilse Herrera, who will play the Jarana and sing the traditional music of Veracruz, son Jarocho. Ilse is a classically trained opera singer, a rockstar performer and cooks professionally at Txikito by day.
There is only one seating and only one night, so reserve promptly to ensure your seat. In the tradition of a true Txoko, you should expect a casual, convivial atmosphere with serious food.
